The Cynara cardunculus is the true soul of a hard cheese that soaks in Sicilian salt brine from 10 to 15 days, then aged for over a year to get the typical complex flavour. Amazing choice on a cheese platter combined with honey, or even grated would be the perfect Vegetarian alternative to Parmesan.

The cheese will be vacuum packed in a 250g slice.
