This smoked stretched-curd cow’s milk cheese, produced with a similar technique of mozzarella.
After it has rested for a few hours it is hung and smoked to produce a complex flavour that works well in many dishes. Try substituting your usual melting cheese for Scamorza – you will be pleasantly surprised.
